A Tabi with honeydew sweetness and bramble acidity by Johan Vergara, a young producer eclipsing his generation in quality.

Whilst on our recent trip to Colombia visiting our partner producers with Cofinet, we got to know Johan Vergara, a young and talented producer.

We were very impressed with the quality of his lots and this Tabi in particular stood out for its clarity and complexity. Johan is in his early twenties, and produces most of the coffees here at Las Flores.

Coffee here is harvested following a strict ripeness criteria, floated and hand-sorted to remove any defects.

Cherries are then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.

This micro-lot is 100% Tabi and is a new variety developed by “Federacion Nacional de Cafeteros.” This unique variety is a cross between the Timor Hybrid, Bourbon, and Typica.
